Pork loin tacos

Ingredients:

A few notes on making these:

  • These are easy to throw in the oven early in the day and then have ready to go at dinner time. The juice and seasonings make them so flavorful.
  • Don’t be tempted to roast this uncovered—the cut is lean and will dry out.

Directions:

  • Preheat oven to 300° F.
  • Rub the pork loin with some olive oil and place in Dutch oven.
  • Add spices, adobo, and juices over pork loin.
  • Bake covered at 300° F for 2.5 – 3.5 hours.
  • Remove and shred meat. Adjust seasonings and add back to the sauce.
  • Serve in warmed corn or flour tortillas with guacamole or avocado crema.
  • Enjoy!
